I am a big fan of crunchy oat cookies but when it comes to chewy cookies.. not so much. For my taste, their center is always too gooey and the outside too crisp. So for me, tasting these cookies was very much unexpected because I thought they were more on the shortbread side than they were on the chewy side. Surprisingly enough, I really really like them!! They are soft, chewy and their half melted chocolate dot in the middle makes these cookies pretty much complete. But I haven't mentioned one ingredient yet; peanut butter! The nutty peanut butter flavor is what truly makes the cookies so tasty in the first place! And if that isn’t reason enough for you to make these cookies ASAP, then there is one more thing, because these cookies don’t only taste delicious but they are also ridiculously easy to make!
Chewy Peanut Butter Chocolate Dot Cookie Ingredients
This recipe truly uses simple ingredients that you will probably always have in your pantry, so here is what you need:
Peanut Butter - Feel free to use any nut butter, but be sure you love the nut butter you choose for this recipe, as these cookies taste intensively like the chosen nut butter.
Chocolate - As you may know, we are extremely addicted to DARK (vegan of course) chocolate. But honestly, it doesn't matter if you change it up, as it only functions as a nice extra.
Chewy Peanut Butter Chocolate Dot Cookie Tips
All purpose flour - We used one cup of all purpose flour but feel free to experiment with this recipe and to use different kinds of flour. Let us know what you think!
Texture - These cookies ARE chewy, but don't worry! Definitely not disgustingly-chewy ;)
Taste - These cookies, especially if you eat them warm just as we did, are super soft, chewy and will melt right away in your mouth leaving a satisfying peanut butter flavor!
Center of the Cookie - If you're short on time or simply just on the lazy side of things;), you don't have to melt the chocolate and instead just press a small, suitable chocolate square into the hollow.
Ingredients
Easy - 15 cookies - 20 minutes
2 cups oat flour
1 cup all purpose flour
½ cup maple syrup
1 tsp baking powder
Pinch of salt
1 cup unsweetened peanut butter
2 tsp vanilla extract
Dark chocolate
Instructions
Preheat the oven to 350F.
Combine oat flour, all purpose flour, and salt together in a large bowl.
Add maple syrup, peanut butter, and vanilla extract and mix until dough forms. Place on the kitchen surface and knead until to ensure everything is evenly combined.
Put back into the bowl and let it rest for a few minutes.
While the dough is resting, melt your chocolate.
Take a medium scoop to scoop the dough onto a prepared baking sheet, form them into a ball and gently flatten them with your palm to spread the dough out a little bit. With your thumb make a little hollow in the middle of the cookie.
Now, take your melted chocolate and pour it into the hollow you have created with your thumb.
Then, it’s time to bake them for about 9 minutes. If in doubt, better take them out too early instead of too late so that they can keep their chewy texture.
Let them cool for 1 minute so they won’t break and, tadaaa, they are ready to eat!
