I'm a bit addicted to oats, but I realized that I can't eat oatmeal all the time because that would be a bit too extreme even for me;). So I had to come up with other ideas to eat oats instead of oatmeal all the time. When my dad tried these cookies for the first time, I immediately fell in love with them (which was surprising because I didn't like peanut butter back then ... I know, shocking, right ?!). The oats make them perfectly crispy, the peanut butter smooth and the maple syrup provides the right amount of flavor and sweetness. And what can I say, now I'm addicted to these cookies too;) ... and believe me, you will be too!
Crunchy Peanut Butter Oat Cookies
Large Flake Oats - Although the cookie's consistency is created by combining oats and flour, the oats are what makes them so crunchy. We are using large flake oats and they work out great for this recipe.
Peanut Butter - The peanut butter not only gives our cookies their nutty flavor but also combines all the ingredients really well! Make sure that you have 100% peanut butter because otherwise you will end up having the cookies being too sweet.
Chocolate Chips - We are using the mini, dark chocolate chips because they divide into the dough equally so you won’t end up with a huge chocolate chip clump.
Plant Based Milk - We used almond milk but seriously use any kind of vegan milk!
Crunchy Peanut Butter Oat Cookies Tips
Don’t skip the chocolate chips! - If you like, use dark chocolate and cut it into pieces or use other chocolate chips, but never leave them out! ;)
Combining the ingredients - mix the dry and wet ingredients separately and then combine them.
Storing - You can easily store them in a dry container over ~3 days.
Ingredients
Easy - 11 to 12 cookies - 30 minutes
1 ½ cup Oats
3/4 cup Whole Wheat Flour
½ tsp Baking Soda
½ cup Maple Syrup
1 cup Peanut Butter
¼ cup Almond Milk
1/3 cup Chocolate Chips
Instructions
Preheat the oven to 350 °F and prepare a baking sheet.
In a large bowl combine the dry ingredients (including the chocolate chips) and mix.
In a separate bowl combine the wet ingredients. Tipp: maybe take some of the milk amount and wait and see if you need more before you pour all into the dough.
Add the wet ingredients to the dry ingredients and stir until combined.
Scoop the cookie dough onto the baking sheet and pop them into the oven. Bake for 20 minutes.
