Lentil Souvlaki

Already fed up and tired from the cold weather?! Then this one's for you! These veganized Souvlaki are the perfect summer barbecue recipe, but making this recipe in the winter creates a cozy yet refreshing feeling that you honestly sometimes just need when it's too cold and gray outside to do anything.



Lentil Souvlaki Ingredients

  • Brown Lentils - Lentils not only taste good but are also super nutritious and healthy, plus they give this recipe a nice soft consistency.

  • Tofu - Adds extra protein and texture.If you prefer to try it with smoked tofu, try it!

  • Onion and Garlic - These two are simply a must in almost every recipe as they give recipes a nice simple flavor boost.

  • Ground Flaxseed - Allows the Lentil Souvlaki to keep their shape.

  • Flaxseed - We decided to just throw some flaxseed to the mixture to give it more flavor and an extra crunch.


Lentil Souvlaki Tips

  • Taste Check - We always recommend taste checking recipes before cooking, frying or baking things as every person has their individual taste buds - some like their food more salty, some sweeter in terms of desserts or baked goods, and some like to add additional spices.

  • Lentils and Measurement - We measured that approximately 1 ½ cup dry/uncooked lentils makes about 3 cups cooked lentils.

  • Shape - Gently press each Souvlaki into an oval so that it stays together and doesn't fall apart.

  • Serve - We highly recommend serving the finished baked lentil Souvlaki on a bed of fresh lettuce and drizzled with vegan yogurt sauce.



Ingredients

Easy - 22 pieces - 30 minutes
  • 3 cups Brown Lentils, cooked (1 ½ cup uncooked Lentils)

  • 1 Large Onion

  • 6 Garlic Cloves, minced

  • 1 Firm Tofu (350)

  • 5 tbsp Paprika Powder

  • 2 tsp Flaxseed

  • 2 tsp Ground Flaxseed

  • 2 tsp Salt



Instructions

  1. Cook the lentils until soft but so that they still keep their shape.

  2. In a small saucepan, saute the onion until translucent.

  3. Mince the garlic cloves and add to the onions. Cook for another minute.

  4. Now, crumble up the tofu into small bits with your hands and put into a large bowl. Add the rest of the ingredients including the onions, garlic and cooked lentils to the bowl. Mix everything.

  5. Once the mixture is thoroughly mixed, divide the entire mixture into about 22 equal looking pieces. Then form each piece into an oval and gently press each together so that each stays in shape.

  6. Spread the Lentil Souvlaki onto a baking tray and bake for 20 minutes at 350°F.

  7. Serve on a lettuce bed, drizzle some vegan yogurt sauce over them and enjoy!
