Meatless-Meatballs

My family and I are always trying new recipes. Someone is always experimenting with a brand new recipe, whether we're veganizing it, changing things up, or coming up with a completely unique idea. When Isabel first made these meatless meatballs, I was amazed at how real they actually looked! I can't tell you if their taste actually resembles meatballs (because I've never eaten meat in my life), but I can tell you for sure that these are a must try! Their earthy herbal flavor combined with the slightly mushy but crunchy texture of the brown lentils makes them not only nutritious but absolutely delicious! Honestly, you will fall in love with these cute looking meatless meatballs!



Meatless-Meatballs Ingredients

  • Lentils - Lentils, specifically brown lentils in this case, are the main ingredient for this recipe as they make up the bulk of the balls.

  • Walnuts - Roasting the walnuts gives this recipe a delicious, rich flavor that takes this recipe and its flavor to a whole new level.

  • Garlic - Garlic, with its unique flavor, gives these Meatless-Meatballs a warm, earthy spiciness.

  • Parsley - The addition of fresh parsley brightens the flavors of each ingredient and provides a nice balance throughout the dish.

  • Cumin Seeds - Along with coriander and caraway seeds, cumin seeds are one of my favorite spices, therefore I just had to add some cumin seeds to this recipe.

  • Soy Sauce and Salt - Since soy sauce is generally quite salty already, you don't need to add much, if any, salt. Soy sauce also gives this recipe a subtle umami flavor.

Meatless-Meatballs Tips

  • Garnish - Feel free to drizzle tahini or any other sauce over the balls.

  • Size - The bigger or smaller you form the balls, the fewer or more you will end up with.

  • Store - If you decide to reserve some balls for later or end up with too many, just follow steps 1 and 2. Place the raw balls in a container and then place the container in the freezer.




Ingredients

Easy - 25 Balls - 20 minutes

  • 400 g Cooked Brown Lentils

  • 100 g Oat Flour

  • 60 g Walnuts

  • 3 Garlic Cloves

  • ¼cup Fresh Parsley

  • 2 tsp Ground Cumin

  • 1 tsp Cumin Seeds

  • 1 tsp Paprika Powder

  • 1 tsp Coriander Powder

  • 1 tsp Ground Black Pepper

  • 1 tsp Oregano

  • 1 tsp Rosemary

  • 3 tbsp Soy Sauce

  • Salt to taste


Instructions

  1. In a large bowl, mash the cooked lentils with a hand masher. Roast the walnuts and the minced garlic in a pan. Now add the remaining ingredients to the bowl with the mashed lentils and mix until well combined.

  2. Press the mixture firmly into balls.

  3. Heat the pan and fry all balls until crispy from all sides.

  4. Enjoy!
