Quinoa Patties Ingredients
Quinoa - Quinoa is the base in this recipe, it's healthy, delicious and a great ingredient for any kind of patties or burgers.
Vegetable Broth - Instead of using a cube of vegetable broth to cook the quinoa, we tossed freshly harvested lovage, also known as wild celery, into the boiling pot of quinoa, as lovage has a very intense and similar flavor
Carrots & Parsley - Both of these vegetables are great and very tasty vegetable additions, but don't hesitate if you want to add other vegetables like spinach, beetroot, cilantro, celery, zucchini, etc.
Onions & Garlic - Garlic and onions are an absolute must in this recipe, as they add a tangy-sweet, herbaceous, and pungent flavor.
Oat Flour - Using oat flour is extremely beneficial as it both binds and keeps these patties together as well as adding moisture.
Curry Powder, Coriander Powder, Salt, Pepper - For aroma and taste!
Quinoa Patties Tips
Individualize - These patties are extremely versatile as you can use whatever spices and veggies you like.
Crispiness - Almost any patty or burger tastes even better when it's nice and crispy on the outside and soft on the inside, so let it cook a little longer to achieve that nice crispiness.
Shaping - We used ⅓ cup to divide the patty mixture into equal sized patties, of course you can also use a cookie spoon, 1/4 cup, or simply nothing at all.
Storing - These patties only take minutes to prep, then simply freeze the leftovers and serve as a quick dinner the next time you're short on time.
Ingredients
Easy - 23 patties - 25 minutes
400g uncooked Quinoa
2 Onions, diced
6 Garlic Cloves, diced
1 cup Fresh Parsley, chopped
2 Carrots, grated
100g Oat Flour
2 tbsp Curry Powder
2 tbsp Black Pepper
2 tbsp Salt
½ tsp Coriander Powder
Lovage Leaves/Wild Celery
Instructions
To a pot add quinoa, water, and lovage leaves and bring to a boil. Cook over low heat for about 20 minutes or until all water has soaked up.
Meanwhile, sauté the onions. Then add the garlic and mix with the cooked quinoa, carrots, parsley and spices in a large bowl. Mix and combine, then slowly add the oat flour and mix again. Taste and season if necessary.
Shape the mixture into 23 equal patties. Take a non-stick pan and cook the patties until golden brown and slightly crispy.
Sprinkle some chopped cilantro on top to serve or combine with our cilantro dip.
